Dinner with Your Doc: Pineapple Avocado Salsa

Now that summer has finally arrived and the COVID-19 restrictions are being softened, BBQ and backyard gatherings are right around the corner. Most BBQ food is very high in salt, which can lead to problems like elevated blood pressure and water retention. Here’s a healthy, colorful side that will be sure to have you invited back to the next party!
Ingredients
- 1 cup diced fresh pineapple
- 1 cup diced avocado (from 1 large avocado)
- 1 cup cherry or grape tomatoes, halved or quartered
- 1 cup frozen or canned corn, prepared
- 1 to 2 tablespoons minced jalapeño (if you're heat sensitive, remove seeds and ribs)
- 3 tablespoons fresh lime juice (about 1½ limes)
- 1/2 teaspoon salt, or more to taste
- 1/2 cup roughly chopped cilantro
Preparation
Place all of the ingredients in a large bowl and gently stir to combine. Season with additional salt and pepper to taste. Serve immediately with whole-grain crackers, chips or thick-cut veggies.
