Dinner with Your Doc: Strawberry Steak Salad

Happy July! We are in the midst of strawberry season and it seems like everyone enjoys these bright, tasty berries. Strawberries provide many nutritional benefits. They are packed with many vitamins, fiber and high levels of antioxidants. About eight strawberries provides more vitamin C than an orange! Strawberries are also a sodium-free, fat-free, cholesterol-free and low-calorie food.
Here’s a recipe that adds the bright berries to a savory steak salad.
Strawberry Steak Salad
Ingredients
- 1 lb. beef top sirloin steak (about 3/4 inch thick)
- 1 Tbsp olive oil, or avocado oil
- Salt, pepper to taste
Salad:
- 8 cups torn lettuce, such as butter, curly or romaine
- 2 cups fresh strawberries, chopped
- 1/4 cup thinly sliced red onion
- 1/4 cup crumbled feta or blue cheese
- 1/4 cup chopped pecans
- 2 Tbsp balsamic vinegar
- 2 Tbsp extra virgin olive oil
- Salt and pepper, to taste
Instructions
- Season your steak with sea salt and pepper.
- Toast pecans: lightly oil pan and place over medium-high heat. Add pecans; stir frequently for approx. 4-5 min until fragrant and starting to brown.
- Preheat a griddle pan or a cast iron skillet over medium-high heat.
- Add oil, then carefully add in your steaks and sear each side until browned and until it reaches 145° F.
- Remove steaks from the heat and let them rest, covered, for about 10 minutes.
- Prepare your salad ingredients and place them into a large serving bowl.
- Slice the steak into 1/2-inch thick pieces and add to salad.
- Sprinkle with crumbled feta cheese and pecans.
- Drizzle with balsamic vinegar and oil, then sprinkle with salt and pepper to taste.
- Toss, serve and enjoy!
